Aquiares Estate, meaning "land between rivers" in the Huetar indigenous language, is a transformative coffee farm in Costa Rica, known as "Aquiares Coffee and Community." Originally founded in 1890, its metamorphosis was orchestrated by Alfonso Robelo, a Nicaraguan refugee fleeing political violence in the 1980s. Alfonso reshaped the farm into a thriving community, challenging conventional landowner-worker dynamics. Under his leadership, Aquiares evolved into a sustainable model of agriculture, emphasizing pride and security for its workers. Today, managed by Alfonso's son Diego, the farm pioneers specialty coffee, focusing on carbon neutrality and hosting environmental studies. This selection from Aquiares reflects a shared commitment to sustainability, equity, and innovation, showcasing the Grand Peaberry—a mechanically washed lot with a large bean size, embodying the farm's dedication to excellence in coffee production. We especially like Aquiares as a slightly quicker pour-over, highlighting it's juiciness and bright citrus characteristics.
